Ingredients:

  • 1 cup non dairy milk

  • 1/4 cup vegan butter

  • 1 cup sweet mashed potato

  • 3 cups all-purpose flour, plus more for dusting

  • 1/4 cup granulated sugar

  • 1 (1/4-ounce) package (2 1/4 teaspoon) active dry yeast

  • 1/2 teaspoon salt

  • 1/2 teaspoon grapeseed oil

Filling

  • 1/2 cup brown sugar

  • 1/2 tablespoon ground cinnamon

  • 1 teaspoon chipotle powder (you can sub cayenne)

  • 1/3 cup vegan butter

  • Sweet Potato Cream Cheese Frosting

  • 1/2 cup vegan cream cheese

  • 1/3 cup confectioner’s sugar

  • 1/4 cup mashed sweet potato

  • 1/2 teaspoon pure vanilla extract

Directions

  1. In a small saucepan, warm the milk and vegan butter over medium hat until the butter has melted. Do not boil it! Remove from heat and stir in the mashed sweet potato.

  2. In a large bow, mix together the flour, sugar, yeast, and salt. Mix together well and create a crater in the center to pour the liquid ingredients into. Using a wooden spoon mix everything together until it becomes difficult to stir. Use your hands to incorporate the remainder.

  3. Flour a clean work surface and transfer the dough to the workspace. Knead it until you’ve got a smooth dough ball. Lightly oil a bowl. Place the dough ball in it and cover with plastic wrap or a kitchen towel, and let it rise for one hour. The dough should double in size.

  4. While you are waiting for the dough to rise, make the filling. In a small bowl, combine the brown sugar cinnamon, and chipotle powder and set aside, In a small sauce pan, melt the vegan butter and set aside.

  5. Once the dough has doubled in size, preheat the oven to 375F

  6. Press the air out of the dough, then transfer it back onto your floured work space. Roll the dough until it is about 1/4 inch thick. You should end up with a a roughly rectangular oval, about 12x16 inches.

  7. Brush the dough with the melted butter and sprinkle with the cinnamon, sugar, spice mix. Fold the short side of the dough over and roll tightly until you have a log. Carefully cut the log into twelve 1-inch slices. Grease a large skillet or 10x10 inch baking dish and plae the rolls in it cut-side down. Bake for 25 minutes or until they’ve expanded and turn golden brown on top.

  8. Meanwhile, make the frosting. Place all ingredients in a food processor or stand mixer with whisk attachment and whip until creamy.

  9. Removed the rolls from oven and let cool for 5-10 minutes. Top with the frosting and serve immediately. they will stay fresh for up to 2 days but, like all baked goods, are best eaten the day they are made!
