Cinnamon Apple Cake

 
 

Ingredients

  • 3 C unbleached all-purpose flour

  • 1 TSP Baking Soda

  • 1/4 TSP Salt

  • 4 1/2 TSP Ener-G Egg Replacer (Equivalent of 3 Eggs) I actually like to use Bob's Red Mill Egg Replacer and use their egg:water ratio

  • 6 TBS water (if using Ener-G Eggs this is the amount you will need)

  • 1 1/2 C Granulated Sugar

  • 1 1/4 C Canola Oil ( I use Safflower Oil)

  • 2 TSP Vanilla Extract

  • 3 C peeled and chopped apples ( I chop them up to about the size of a fingernail)

Directions

  1. Preheat oven to 350 F and lightly oil a Bundt pan or 9- or 10-inch springform pan

  2. Sift together flour, baking soda, salt, and cinnamon and then set aside

  3. Whip your vegan egg in a blender or mixing bowl until it is creamy

  4. Add sugar, oil, and vanilla to egg mixture and beat for 2 minutes

  5. Stir dry ingredients into the wet ingredients

  6. Fold in the apples

  7. The batter will look incredibly thick! This is ok it means you did it correct

  8. Pour batter into pan and bake for 1 hour and 15 minutes

  9. Remove from oven and let cool

  10. Enjoy!
