The Best Chocolate Chip Oatmeal Cookies

Look this is a smarter not harder post. I’ve been wanting to post this recipe for quite sometime but god dAmmit I’m exhausted.

I recently made this cute infographic and I realized that this is good enough. I LOVE love love these cookies so much and I just want this recipe up already. Plus, they have been mostly fool proof recipe which is always a win and they have gotten rave reviews from all my friends.

Couple notes: I’d read these if you wanna make this easier!!!!

I cook them for 12 minutes. I leave them on the pan for at least 5 minutes to cool. Don’t worry about how soft they are. They will firm up and that softness is going to give them a great chew.

I opt for parchment paper when I cook them but you can lightly oil the cookie sheet.

Absolutely oil your hands when you spoon the cookies onto the sheet. The dough is crazy adhesive and my guess is that it has to do with the oats and the oat bran. The water activates properties within the oatmeal that makes it sticky which is part of the health benefits of oats in general. I could be super wrong on this but I am willing to bet that is the case here.

I have run out of brown sugar because it’s the apocolypse and I’m lucky as fuck to even have sugar. Because I am vegan I have all sorts of random shit in the house, like two bottles of molasses. I used light brown sugar and I add a half tablespoon ish of molasses to the dough when I am mixing the wet ingredients.

Not sure what a good non-dairy butter is? I love Earth Balance. They make butter sticks to help making baking easier. Before the shit hit the fan I bought like 8 boxes cuz I knew life was about to suck for a real long time.
