Ingredients

  • 1 Cup Butter

  • 3/4 Cup Sugar

  • 1/2 Cup Molasses

  • 1 Vegan Egg ( I used Follow Your heart Vegan Eggs but Bob’s Red Mill Vegan Egg would work great too)

  • 2 1/2 Cup Flour

  • 1 TSP Baking Soda

  • 2 TSP Ginger

Directions

  1. Pre Heat oven to 350. Line one cookie sheet with parchment paper

  2. Whip up your vegan egg according to directions and allow it to sit and “set”. It needs time to hydrate.

  3. Cream together the butter and sugar in a medium bowl

  4. Add molasses and the egg to your butter and sugar mix

  5. In a separate large bowl stir together all the dry ingredients

  6. Add the wet ingredients to the dry ingredients and stir until just combined

  7. Roll out dough on a cutting board and cut into circles.

  8. Sprinkle a little sugar on top of cookies

  9. Bake for 10-12 minutes
