Two of the recipes are a bit more complicated than the simple biscuit recipe but I’ve left the rosemary recipe relatively stripped down in terms of difficulty. Feel free to use these as jumping off points. Instructions

  1. Add the softened butter and powdered sugar to the bowl of a stand mixer fitted with the paddle attachment. Cream the butter and sugar until smooth and fluffy, about 2 minutes.
  2. If using egg replacer, follow the instructions provided and allow the mixture to sit and gel. At least 5 minutes.
  3. Add in the egg, vanilla, and lemon zest and mix until fully incorporated.
  4. Add in the flour, almond flour, baking powder, and salt and mix until just combined. The dough should come together into a ball but will feel dry. If the dough doesn't come together, you can add a teaspoon of milk or water at a time until it does.
  5. Then gently fold in the dried lavender flowers.
  6. Press the dough into a disc and wrap tightly in plastic wrap. Refrigerate until firm (2 hours minimum but ideally overnight).
  7. Line a baking sheet with parchment paper.
  8. On a lightly floured surface, roll out the dough ¼ inch thick and cut into circles. Re-roll and cutout the scraps.
  9. Place cutout cookies 1-2 inches apart on your baking sheet (they won’t spread). Place the baking sheet in the freezer for a minimum of 20 minutes (or the fridge for 40 minutes) before baking to allow the cookies to firm back up. This ensures the cookies won't spread during baking.
  10. While the cookies are chilling, preheat your oven to 350°F.
  11. Bake for 8-10 minutes or until the edges are set. Bake on the middle rack of the oven and rotate the pan halfway through baking for the best results. It usually takes 2-3 batches to bake all the cookies.
  12. Let the cookies cool on the baking sheet for 2-3 minutes, then remove and let them finish cooling on a cooling rack. Let the cookies cool completely before glazing.
  13. To make the glaze, whisk together the powdered sugar and lemon juice in a small bowl, until smooth. Then stir in the lemon zest and lavender flowers if desired.
  14. Dip the tops of the cooled cookies in the glaze and place back on the cooling rack. After about 20 minutes the glaze will harden.

  4. Beat in the dry ingredients until just combined. Beat in the chocolate chips and the cherries until mixed.
  5. Scoop or roll the dough into balls that are 1.5 to 2 tablespoons in size. Make sure they are about 2 inches apart on the baking sheet.
  6. Bake for 10 to 12 minutes, or until the cookies are just barely set. Sprinkle with flaked salt. Let cool completely before serving.
