Instant Pot Quinoa

This is one of the first recipes I ever posted to Mortician in the Kitchen, so it’s super satisfying to come back two years later and “update” it.

Quinoa may be one of the most misunderstood and most delicious things on the planet when it comes to taste. When people say they don’t like it, my guess is because they had it cold in a kale salad. BLECK. No wonder you didn’t enjoy it, I hate that shit. Look quinoa is perfect on it’s own! Add some salt and butter and you have a savory and healthy meal that feels just as satisfying as chocolate or pizza.

This recipe is for the Instant Pot which I think no home should be without. You can get one for pretty cheap or wait for a sale on Amazon. Mine was $75 because I got a mid size one but you can get the smaller one for around $50.

Ok, so why is this on MITK? Because this is an awesome companion dish and you need to know how to make it properly. First off, I have been cooking non-stop all week, making the tastiest and most interesting dishes, and I feel like my arteries are going to clog.

This thought process led me to believe that those who have experienced a death must also feel like my stomach feels right now. Meaning, that you should bring a healthy meal to your pal in need because they are probably stuffed on mac and cheese and chocolate cake.

If you wanna spruce this up you can always add some chipotle mayo to the bowl of quinoa. Ohhh baby is it delicious!

Ingredients

  • 1 cup quinoa (any color) rinsed well

  • 1.5 cups water

Directions

  1. Rinse quinoa well under water until it runs clear before cooking so that you can remove the “saponin”, a natural insect repellent. It is not necessary to soak before cooking.

  2. Toss that shit into the Instant Pot and add the water and a pinch of salt if you want.

  3. Close and lock the lid. Select [PRESSURE COOK] and set for 1 Minute.

  4. The pot will take about 7-8 minutes to heat up and then you will hear it beep when it’s ready. When it beeps and starts to cook I like to hit a timer for 11 minutes. You’ll see why in the next step.

  5. After 1 minute don’t do anything! Leave the pot as is. It will go into a KEEP WARM mode. It is cooking the quinoa still so you don’t want to release the pressure inside just yet. Let it sit there for 10 minutes. This is why I suggest an 11 minute timer. One minute is the cooking and ten is the waiting.

  6. After the quinoa has been left to sit for 10 minutes you can open up the pressure release valve and BAM you have perfect quinoa. It’s so easy and so so so soooo good for you too!
