Ingredients

  • 1 cup butter or margarine ( I use Earth Balance Butter Sticks)

  • ¾ cup sugar

  • 1 teaspoon vanilla

  • 1 egg ( I use Bob’s Red Mill Egg Replacer)

  • 2 ¼ cups unsifted flour

  • ½ teaspoon baking powder

  • ⅛ teaspoon salt

Directions

  1. Preheat oven to 350°F

  2. Line baking trays with baking paper

  3. In the bowl of an electric mixer, cream the butter on medium speed until light and fluffy

  4. Gradually beat in the sugar, vanilla, and egg, and mix until just combined

  5. Turn the mixer speed to low, and slowly add the flour, baking powder, and salt.

  6. Mix until thoroughly combined. Your dough should be soft

  7. I would recommend chilling these for at least 30 minutes if the dough is too soft just as an added note because you want the cookies to hold their shape.

  8. Working in batches, squeeze the dough through a cookie press onto the baking trays. Leave space between cookies so they can spread.

  9. Bake for 8–10 minutes or until light golden brown. Transfer cookies to a rack and allow to cool
