Crème Fraiche

Ok so basically this is fancy sour cream and it’s delicious! I’ll spare you the long intro but this is yummy and easy to make and those are the things I am looking for when it comes to making food. This recipe allows you to make something simple like a beans, rice, tomato bowl and amp it up with a dollop of this and some lime juice!

Ingredients

  • 1 cup cashews or raw almonds, soaked in water for at least 8 hours

  • 3/4 cup water if using cashews, or 1.25 cups water if using almonds

  • 1/4 cup plain non dairy yogurt

  • 1/4 teaspoon salt

Cashew Directions:

  1. Puree the nuts, water, yogurt, and salt in a blender until smooth.

  2. Pour into a clean container and cover with a lid.

  3. Let it sit at room temp for 24-72 hours until it thickens and sours.

  4. Refrigerate the mixture. It will thicken more in fridge.

  5. Stays good 2-3 weeks

Almond Directions

  1. Puree the almonds and water in a blender until a creamy sludge forms.

  2. Pour this into a nut. milk bag and extract as much milk as possible.

  3. Stir in yogurt and salt.

  4. Pour into a clean container and cover with a lid.

  5. Let it sit at room temp for 24-72 hours until it thickens and sours.

  6. Refrigerate the mixture. It will thicken more in fridge.

  7. Stays good 2-3 weeks
