Ingredients

  • 2 tablespoons coconut oil

  • 1 small red onion, diced

  • 2 garlic cloves, minced

  • 2 celery stalks, chopped (about 1.5 cups)

  • 2 medium carrots, chopped (about 1.5 cups)

  • 4 small Yukon Gold potatoes, peeled and cut into 1/2-inch cubes

  • 2.5 cups fresh corn kernels or frozen corn kernels

  • 1 (14-ounce) can of full-fat coconut milk

  • 2 cups of vegetable stock

  • 1 teaspoon red chili flakes

  • 1 teaspoon black pepper

  • Salt to taste

  • candied pepitos (not necessary but delicious)

Directions

  1. In a large heavy-bottom pot, melt the oil over medium-high heat. Add the onion, garlic, and celery and saute until the onion is translucent about 3 minute. Stir in the carrots, potatoes, and corn. Pour in the coconut milk and add the stock. Bring to a boil, then reduce the heat to medium-low and simmer until the vegetables are tender, about 20 minutes.

  2. Remove pot from heat. Once it has cooled for about 15 minutes, transfer about a third of the soup to a blender and puree until smooth. (Alternatively, blend the soup in the pot using a handheld immersion blender, being careful not to puree it completely.) Return the soup to the pot and add the red chili flakes and pepper.

  3. Season to taste with salt and more pepper if necessary.
