2 tablespoons coconut oil
1 small red onion, diced
2 garlic cloves, minced
2 celery stalks, chopped (about 1.5 cups)
2 medium carrots, chopped (about 1.5 cups)

2.5 cups fresh corn kernels or frozen corn kernels
1 (14-ounce) can of full-fat coconut milk
2 cups of vegetable stock
1 teaspoon red chili flakes

Directions
